Shiro Shoyu / White Soy Sauce.A new intervention that carefully blends and unifies, which fits perfectly into the vibrant atmosphere of China Town London. Inspired by Culinary needs and deconstructive architecture, the proposal sits above a significant Taiwanese Restaurant. Importing aged white soy sauce is not easy, so why not produce their own on the rooftop, here in London. The proposal shows a self sufficient small scale soy sauce factory as an upward extension to the current restaurant. A summer garden produces the beans which are harvested and taken into the space of the lower floor, dimly lit through a perforated skin. Fermenting beans are stored in barrels, prior to being bottled and taken down to the restaurant for use.
